curried lentil soup

Last week's soup, just catching up. This one is similar to Tansy's excellent red lentil soup, which I highly reccomend.
Ingredients
- 2tbsp veg oil
- 1 onion, chopped
- 2 tsp curry powder
- 1/2 tsp ground cumin
- 1tbsp tomato paste
- 1.5 litres veg stock
- 125g red lentils
- 1 small head broccoli, broken into florets
- 2 carrots, chopped
- 1 parsnip, chopped
- 1 stalk celery, chopped
- freshly gound black pepper
- 1tbsp chopped fresh parsely
Serves 6
Directions
- Heat oil in large saucepan, add onion, curry powder and cumin. Cook, stirring for 4-5 minutes, until onion is soft.
- Stir in tomato paste and stock, bring to the boil. Reduce to simmer, add lentils and simmer covered for 30 minutes.
- Add broccoli, carrots, parsnip and celery. Cook, covered, for another 30 minutes, until the vegetables are tender.
- Season to taste and stir in parsley just prior to serving.
