red soup

This week's soup has probably been the best to date. It is an excellent soup over which to discuss the plight of the Kronstadt sailors with your comrades. Or something.
Really fast and easy to make, as well. Make this soup now.
Ingredients
- 1 red pepper, seeded, chopped
- 1 (spanish) onion
- 1 garlic clove, crushed
- 2tbsp olive oil
- 400g can chopped tomatos
- 1 litre veg stock
- 2tbsp long grain rice
- 200g can of red kidney beans
- 1tsp dried oregano
- 1tsp sugar
- chopped parsely, grated cheddar to garnish
Serves 4
Directions
- Put pepper, onion, garlic and oil into a large saucepan. Heat until sizzling then turn down to low. Cover and cook gently for 5 minutes.
- Add everything else (except the garnish - duh!) and bring to the boil. Stir well, then simmer covered for 15 minutes.
- Season to taste, serve, garnish. Except I didn't bother with the garnish and it still rocked.
